300 gmtomatoes
peeled
2red bell peppers
0.5red onion
4garlic cloves
1 Tbspginger powder
2chili pepper
1 Tbspoil

Instructions
Obe Ata
Step 1
Purée the obe ata ingredients except the oil in a blender until smooth.
Step 2
Heat the oil over medium-high, add the purée and bring it to a simmer. Reduce the heat to medium, cover and simmer until slightly reduced, for about 20 minutes.
Rice
Step 3
Heat the oven to 180 degrees.
Step 4
Heat the oil over medium and cook the onions for about 10 minutes, until softened.
Step 5
Remove half the onions to a plate and set aside.
Step 6
Add the garlic and sauté until fragrant.
Step 7
Add the tomato paste, curry, paprika, salt and pepper and cook for 2 minutes.
Step 8
Stir in the obe ata sauce and bring to a simmer over medium heat.
Step 9
Stir in the rice, thyme, bay leaf and the stock and cover with a lid.
Step 10
Transfer to the oven and cook for 35 minutes.
Step 11
Remove from the oven and let sit, covered, for 15 minutes.
Step 12
Uncover, fluff the rice with a fork and stir in the reserved sautéed onions.
