Instructions

Step 1
Preheat oven to 160C fan forced
Step 2
Pulse spinach leaves, feta and red onion in food processor until mixture resembles coarse breadcrumbs
Step 3
Whisk eggs, milk, salt & pepper (to taste) and mustard seeds until combined
Step 4
Lightly spray 12 muffin tray with canola oil
Step 5
Pour egg mix evenly into 12 muffin spaces
Step 6
Add large tablespoon of spinach & feta mix to each ‘muffin’
Step 7
Bake for 15mins or until muffins are puffed, tops are solid and golden on sides
