Instructions
Step 1
cut off the top 2/3 of each lemongrass stalk, trim off the outside leaves and e core thinly.

Work in the fish sauce, lime juice, and hot sauce.

Marinate meat for 1-2 hours, turning once or twice.

purée lemongrass, garlic, shallots, lemon zest, chillies and sugar

Heat oil on high

Brown chicken on all sides and remove

Wipe out pan and add strained marinade

Fry for 3 minutes

Add 1 cup coconut milk and 1 cup chicken stock. Reduce.
