Crispy Rice Paper Rolls

These Crispy Rice Paper Rolls are such a great and delicious discovery! So easy and quick to make - chrisp on the outside and soft on the inside!
I used single rice paper per roll, not double, and added some fried seitan and it was amazing!
I am seriously in love with this thing! :D

Roll
8rice papers
if you are rolling double than 16
1carrot
sliced to thin strips
1cucumber
small, sliced to thin strips
1 cupred cabbage
thinly sliced
1 cupleek
or scallions, thinly sliced
40gthin rice noodles
60gseitan
optional, cut to thin strips
2 tspsesame oil
for frying

Instructions
Step 1
1. Start by cooking the rice noodles according to package .
Step 2
2. Chop the carrots and cucumber in thin sticks. Slice the red cabbage as thin as possible. Roughly chop up the leek.
Step 3
3. Dip the rice paper in water a couple of times. Place the filling in the centre of the rice paper and roll it up like a burrito (or spring roll).
Remember to doble the layers. Using two rice papers for each roll.
Step 4
4. Fry in sesame oil until crispy and golden brown.
Step 5
5. Mix all the listed under sauce.
