Instructions

Step 1
Cook the polenta according to the instructions on the packet then put it into a container to cool. When needed. slice and griddle for a few minutes on each side.
Step 2
Meanwhile. clean the mixed mushrooms and slice or break them inte roughly even-sized pieces. You can use open-cup, button. beech. enoki and shiitake mushrooms, but any combination will do.
Step 3
Add a dash of olive oil. red chilli and the garllc to a I arge pan. Stir-fry for a minute, add a dash more olive oll and then the mushrooms, stirrlng constantly for three to four minutes, until cooked.
Step 4
Add some parsley, a dash of white wine and a pinch of salt and cook for a further minute. Serve on top of the grilled slices of polenta and drizzle with a little extra virgln olive oll.
