Ingredients
4 servings

500gStewing beef

2 Tbsground black pepper

1 Tbssalt

2spring onions
large, green ends only, chopped

5 Tbsvegetable oil

1garlic clove
roughly chopped

1onion
roughly sliced

1 cmfresh root ginger
piece, peeled and chopped

0.5red pepper
deseeded & roughly chopped

0.5green pepper
deseeded & roughly chopped

1tomato
cut into wedges

Fresh thyme sprigs
broken into pieces

2 Tbschilli barbecue sauce
or reggae reggae sauce

1 tspsalt
4split pea roti
to serve
Instructions
Step 1
Put beef in a bowl Sprinkle with the black pepper & salt & mix together using your hands
Cover & leave in fridge for an hour or overnight
Step 2
Heat the oil in a large casserole dish till medium hot
Fry till browned, reduce heat & cook for 15 minutes
Step 3
Add other ingredients with 250ml of water & chilli sauce
Simmer for 45 minutes over a gentle heat
Step 4
Serve with rice & or wrap
