Spread out diced potato’s on a baking tray.
Drizzle with olive oil and a pinch of salt
Roast for about 20minutes Remove set aside
Place a frying pan over medium heat and add the pesto
Break in the eggs and add in the tomatoes away from eggs Remove from heat add spinach and potatoes Once wilted serve with a sprinkle of Parmesan cheese
