Black Bean Quesadilla

Easy to cut this recipe in half for just two people. It's really hard to flip the entire tortilla so next time I may only fill half the tortilla and fold it in half for cooking.

Ingredients
4 servings

2 x 15 ozcans Seasoned Black Beans
drained

1 cuphot salsa
2 cupsshredded Coby & Monterey Jack cheese

88-inch flour tortillas

⅓ cupsour cream

2avocados
medium
Instructions
Step 1
Mash one can of beans.
Step 2
Mix in remaining can of beans and the salsa.
Step 3
Spread mixture evenly on 4 tortillas.
Step 4
Top the tortillas with the cheese and cover with the remaining tortillas.
Step 5
Heat skillet and cook quesadillas until golden brown flipping carefully to toast each side.
Step 6
Cut into wedges and serve with avacado and additional salsa and sour cream on the side.
