Instructions

Step 1
1. Melt the butter in a non-stick frying pan. Once it begins to sizzle, add the thyme, pul biber and figs, cut-side down. Fry over a medium heat for 3-4 minutes, then flip and cook the other sides for 3 minutes. Meanwhile, heat the oil in another frying pan, add the halloumi and fry over a medium-high heat for 2-3 minutes on each side until golden, then set aside on a serving platter.
Step 2
2. Add the honey and vinegar to the figs and cook for about 1 minute. Tip the figs and sauce over the halloumi. Sprinkle with the walnuts, toss through the rocket, squeeze over a little lemon juice and serve at once. Cook's Tip: This makes a lovely starter or light lunch with crusty bread. You could also toss through cooked bulgur wheat for a delicious meal.
