½ teaspoonbaking powder
½ teaspooninstant coffee granules
dissolved in 1 tablespoon hot water
½ teaspoonvanilla extract
2 pinchessalt
1egg yolk
¼ cupheavy cream
1 tablespoonbutter
½ teaspooncaramel extract
or maple
¼ cupchopped pecans
¼ cupunsweetened flaked coconut
1 teaspooncoconut flour
2 Tbsstevia
Instructions
Chaffle Instructions
Step 1
Preheat mini Dash waffle iron until thoroughly hot.
Step 2
In a medium bowl, whisk all ingredients together until well combined.
Step 3
Spoon a heaping 2 tablespoons of batter into waffle iron, close and cook 3-5 minutes, until done.
Step 4
Remove to a wire rack.
Step 5
Repeat 3 times.
Filling Instructions
Step 6
In a small saucepan over medium heat, combine the egg yolk, heavy cream, butter, and sweetener.
Step 7
Simmer slowly, stirring constantly for 5 minutes.
Step 8
Remove from heat and stir in extract, pecans, flaked coconut, and coconut flour.
