Instructions
Step 1
1. Cut off the top and bottom of the zucchini and spiralize with a vegetable spiralizer or peeler (see Notes).
Step 2
2. Heat the olive oil in a large skillet over medium heat. Add the zucchini noodles and spinach. Mix well. Cover and cook, stirring occasionally, for 8 to 10 minutes, until al dente. Add sea salt to taste.
Step 3
3. Garnish with fresh basil and Chimichurri Verde right before serving.
