Instructions

Step 1
Place the cauliflower florets into a food processor and pulse until a rice like texture forms. Set aside.
Step 2
Place one sheet of nori shiny side down on a cutting board. Scoop about ¾cup of cauliflower rice onto the end of the nori sheet closet to you and spread it evenly covering the bottom half of the sheet. Arrange the desired vegetables and/or fruits in the middle of the cauliflower rice.
Step 3
Carefully lift the nori from the bottom edge close to you and begin rolling it tightly toward the top. Just before finishing the roll, dip your finger in water and run it along the top edge of the sheet.
Step 4
Using a sharp knife, slice each sushi roll into even pieces.
Step 5
To make the dipping sauce, Whisk together the maple syrup, lime juice, cayenne and ginger.
Step 6
Serve the sushi with dipping sauce and Wasabi.
