Ingredients

2 Tbspextra virgin olive oil
1yellow onion
large, finely chopped
1garlic clove
large, chopped
1 ½ teaspoonground coriander
1 ½ teaspoonground cumin
1 ½ teaspoonsumac
1 ½ teaspooncrushed red peppers
2 teaspoondried mint flakes
⅛ tspsugar
1 tablespoonflour
6 cupslow-sodium vegetable broth
3 cupswater
more if needed
10 ozfresh spinach
1 ½ cupsgreen lentils
rinsed
1lime
juice of
2 cupsflat leaf parsley
chopped
Instructions
Step 1
In a large pot, heat the olive oil. Add the chopped onions and sautee until golden brown. Add the garlic, all the spices, sugar and flour. Cook for about 2 minutes on medium heat while continuing to stir regularly.
Step 2
Add the broth and water. Set the heat to high and bring to a rolling boil. Add the spinach and the lentils. Cook for 5 minutes on high then reduce the heat to medium-low. Cover and cook for 20 minutes or until the lentils are fully cooked to tender. May need to add more water for preferred liquid amount.
Step 3
Stir in the lime juice and chopped parsley. Remove from the heat and let sit covered for 5 minutes.
