Ingredients
8 servings

1 cupgreen lentils
can be substituted with brown lentil

400gCanned chickpeas

400gCanned white kidney beans
or any white beans

400gCanned White butter beans

¼ cupFine bulgur

8 cupswater
Boiled

1yellow onion
medium sized, chopped into small pieces

6 piecesShallots
or small onion

½ teaspoonGround Cumin

½ teaspoonAll spice

4 tablespoonOlive oil

Salt
to taste

1 tablespoonparsley
chopped, Garnish
Instructions
Step 1
We wash the bulgur, chickpea and all beans and dry them.
Step 2
Sauté the shallots in a skillet with 1 Tablespoon of olive oil until golden brown and keep it aside.
Step 3
In a large pot Sauté the chopped onion with 2 tablespoon of oil over a medium heat until becomes golden, then add the lentils and spices to it and stir the mixture for 2 minutes, then pour the boiling water on the mixture, cover it and leave it for 20 to 30 minutes.
Step 4
Add the beans, chickpeas, bulgur & fried shallots to the pot and let it boil over low heat until the sauce thickens, about 30 minutes. (You can add some boiled water if necessary).
Step 5
Add a tablespoon of olive oil and stir it, pour it in a serving bowel then garnish with chopped parsley on top.
Step 6
Note: You can add more water if necessary.
