Ingredients

1.5 lbsboneless skinless chicken thighs
can sub chicken breast, but might need to cook longer, depending on thickness
2 tablespoonpoultry seasoning
divided
½ teaspoonpink Himalayan salt
divided
½ teaspoonground pepper
divided
1 tablespoonolive oil
Alfredo Sauce
Instructions
Step 1
Make alfredo sauce by placing all of the sauce ingredients in a high-powered blender. Blend until smooth and creamy and set aside.
Step 2
Heat a large skillet over medium heat and add oil and chicken to the pan—season with half the poultry seasoning, salt, and pepper. Sear for 5-6 minutes undisturbed so a brown crust starts to form.
Step 3
Flip and season with the rest of the seasoning, salt, and pepper and cook for another 5-6 minutes, or until the chicken is fully cooked. Remove and set on a cutting board.
Step 4
In the same pan, turn the heat to low, add bone or chicken broth and deglaze the pan. Then, add in the alfredo sauce. Stir continuously to heat up.
Step 5
Cut chicken into strips or cubes. Serve with a bed of zucchini noodles or any approved noodle (heat them up for 3-5 minutes on the stove first), top with sliced chicken and drizzle sauce all over.
