Ingredients
6 servings
1 Tbspolive oil
0.5white onion
diced
½ tspsalt
½ tsppepper
1clove garlic
minced
2 Tbspflour
1 cupvegetable stock
½ cupmilk
4 cupsfrozen mixed carrots broccoli and cauliflower
2 cupsham
leftover, shredded
1 sheetpuff pastry
defrosted
Instructions
Step 1
Preheat oven to 400°F.
Step 2
Add oil to large frying pan and set to medium-high heat. Add onion, salt and pepper, and saute 4 minutes. Add garlic and cook 1 minute. Sprinkle in flour and stir, evenly coating onions. Turn heat up to high. Add vegetable stock and milk. Cook 5 minutes, stirring often, until sauce thickens. Add vegetables and ham. Stir to combine.
Step 3
Spray pie dish with cooking spray. Add pan mixture to pie dish. Cover with puff pastry, tucking square corners under to form round shape. Cut 1 -inch slit in middle of pastry for venting. Bake 30 minutes, rotating halfway through.
Step 4
Remove from oven and let rest 15 minutes before slicing and serving. Enjoy, refrigerating any leftovers.
