So back in 2008 or so My husband and I just started dating. You know that time period where you are still on your best behavior and trying not to let them see all of your crazy. Yeah it was during that time. Well we were going out to see a movie at the $1.00 theater and I was going to pick him up from work. He had been super busy that day and had mentioned he was starving. I decided to make Venison chili since I had recently been gifted some ground Venison from my Dads freezer. Thus a thermos full of deer chili helped seal the deal

Step 1
Crock Pot Version. Add 1 Tablespoon of fat or oil to the pan per pound of Venison. If you have Venison that has been mixed with fat you can skip this step. Brown Venison. Once done place in crockpot. Add 1 tsp of extra oil if needed. Saute onions and peppers until softened about 5 minutes on Medium heat. Add garlic and saute 1 minute. Add to crockpot. Add dry Seasoning to onion, pepper, meat mixture and stir. Add Beans, Tomatoes, hot sauce, beer, and water if needed. A note on the water. I add this based on how thick or thin it is already. You may need to add a touch more depending on how long you cook it. Cook on low for 8-10 hours or high 5-6 hours
Step 2
Stovetop Method: Everything as above but you will use the bear to deg-laze the pan after saute the onions and peppers. Also you will want to let it come to a boil and then simmer. I mean a true simmer not a rolling boil simmer. 2 Hours if possible. It will be done in 1 hour but the longer you let it go the deeper the flavor will be.
