Step 1
Preheat the oven to 170°C (340°F), 150°C (300°F), gas mark 3. Line a baking tray with greaseproof paper.

In a food processor, blitz the wholemeal break into fine crumbs. Place into a shallow disk with the garlic granules, chilli powder and salt and mix well.

Dice the chicken into bite-sized pieces (about 2cm/¾ inch cubes). Beat the egg in a bowl and add the diced chicken, stirring to ensure the chicken is coated in egg. Put the chicken into the breadcrumbs, a few pieces at a time. Shake the chicken around in the breadcrumbs to coat and place each piece onto the baking tray. Repeat until all the chicken is coated on breadcrumbs. If you have any breadcrumbs left over, dip the breaded chicken in the egg again then back into the crumbs for an extra crispy coating.

Spray the chicken with cooking spray and pop in the oven for 20-25 minutes until golden and the chicken pieces are cooked through. The chicken can also be frozen before re-heating.
