The Fluffiest Algerian Pancakes - Mchewcha مشوشة with Honey Butter Sauce 🤤

These pancakes take on a French toast/ Dutch pancake sponge cake feel. They are so fluffy and delicious and so easy and quick to make! They are a native (Kabyle) recipe from Algeria and are so satisfying and high in protein. One pancake will serve a small family as it is so thick it is sliced like a cake to eat. Enjoy it with your favorite tea (I like it best with mint tea ❤️)

Instructions

Step 1
Add all pancake batter ingredients into a blender and pulse for 1-2 minutes.
Step 2
In a small/medium sized saucepan, place some cooking oil and set the temperature to medium low heat. Temperature must be at a low heat to allow the cake to cook on the inside without burning the bottom.
Step 3
Add the pancake batter and cover the pan fully.
Step 4
Let it cook for about 10 minutes or until the top is all bubbly and the sides are golden brown.
Step 5
Use a large plate to flip the pancake. Place the plate on top of the pan, flip the pancake onto the plate and then place it back in the pan to cook the other side for 3 minutes.
Step 6
On the side, prepare your honey butter syrup. If you're not a fan of honey, feel free to use maple syrup or date syrup instead.
Step 7
To prepare the syrup, in a small saucepan, melt your butter, then add the honey and cook together until smooth in texture.
Step 8
Plate the pancake and slice it up. Pour half of the syrup over the pancake in between the cracks that you sliced.
Step 9
Serve with the remaining syrup on the side to dip into.
Step 10
Enjoy with your favorite tea!
