Ingredients

2 tablespoonsrice wine vinegar

1 tablespoongrated ginger

3 cupsgreen cabbage
finely shredded
3 cupsromaine lettuce
finely shredded
2 ½ cupsshredded rotisserie chicken
½ cupcrispy quinoa

Instructions
Step 1
Combine both oils, vinegar, honey, soy sauce, ginger, garlic, and sesame seeds and whisk together until completely combined.
Step 2
In a large salad bowl combine cabbage, lettuce, and chicken. Drizzle with 2/3 of the dressing and toss together.
Step 3
Top with remaining ingredients and drizzle with remaining dressing. Serve.
Step 4
Crispy Quinoa: Spread ½ cup cooked quinoa onto a baking sheet in a single layer and leave out to dry a bit, about 1 hour. Place a skillet over medium-low heat. Add 2 tablespoons of oil. Add quinoa and spread onto a single layer. Lightly season with salt and pepper. Toast quinoa for 2 minutes before stirring. Continue to toast for an additional 2 minutes, constantly stirring. Transfer to paper towels and cool.
Step 5
Fried Wonton Strips: Fill a tall-sided pot with 2 inches of oil, place over medium heat and bring to 325˚F. Stack 6 sheets square wontons together and slice into thin strips. Carefully fry wonton strips in oil, moving mixture around with tongs (to create texture) for 1 to 2 minutes or until wontons lightly brown. Remove from oil and transfer to paper towels. Season with salt.
