Chicken in Black Bean Sauce

Instructions

Step 1
First, make the black bean sauce. Add a drizzle of olive oil to a non-stick saucepan and place over medium heat. Add the chilli, half the onion, half of the garlic, and half of the ginger and cook for 5 minutes or until the onion starts to soften. Set aside 1/4 of the black beans, then add the rest to the saucepan along with 600ml boiling water. Bring to a simmer and cook for 15 minutes.

Meanwhile, add a drizzle of olive oil to a non-stick frying pan over medium heat. Add the chicken and stir-fry for 7-8 minutes or cooked through. Then, transfer to a plate.

Add the pepper, sugar snaps, and pak choi to the frying pan, along with the remaining onion, garlic, ginger, and black beans. Stir-fry for 7-8 minutes or until the peppers and onions are soft, then stir in the chicken.

Step 4
In the black bean sauce, stir in the miso paste, soy sauce and vinegar. Blitz until smooth with a stick blender or food processor. Add the black bean sauce to the chicken and vegetables and simmer for a few minutes, the serve with hot rice or noodles.
