There seems to be so many different variations of the chimichurri sauce and honestly I never not like a a single version. I love to make this and serve it on a bed of veggies because the sauce leaks onto the veggies working as a dressing as well. This is how I make the sauce after extensive tries, I finally got the measurements that suites my taste buds.

Ingredients

Chimichurri Sauce
4cloves garlic
finely minced
1shallot
finely minced
1red hot chili pepper
minced
1serrano chili pepper
minced
15gcilantro
finely chopped
5gparsley
finely chopped
1 tspdried oregano
1 Tbspwhite wine vinegar
2 Tbspfresh lemon juice
½ cupolive oil
2 pinchessalt
to taste

Instructions
Step 1
1. Combine all ingredients list under “Chimichurri Sauce” and let sit at room temperature for at least 10 minutes to ensure vinegar activates.
Step 2
2. While sauce is resting, prepare the lettuce and halved cherry tomatoes on a plate and set in fridge until later use.
Step 3
3. Season the steak with salt and pepper generously.
Step 4
4. Sear and flip, add garlic and butter and baste.
Step 5
5. Cook steak to desired done ness and let rest
Step 6
6. Slice the steak

7. Lay steak on the vegetable bed and drizzle the chimichurri on top.

8. Serve
