Instructions
Step 1
Wash the green beans by trimming the ends, cut each string of green bean into 2-4 bite-sized pieces depending on its size, and set aside.
Step 2
In a medium heavy-duty pot, heat 2 tablespoon olive oil over medium heat until shimmering.
Step 3
Add the onion and cook, stirring occasionally, until softened and translucent, about 3 to 5 minutes.
Step 4
Add the garlic and cook until fragrant, then add the tomato paste and stir for 1 minute.
Step 5
Add the beans and cook, stirring occasionally, until the onion and garlic just begin to brown and the beans turn bright green, about 3 minutes.
Step 6
Add salt & All spice then the chopped tomato and stir for a minute
Step 7
Add enough water to submerge the mixture, then raise the heat to high, and cook, stirring occasionally, until the pot is almost dry, 10 to 15 minutes.
Step 8
Add whole head (knob) of garlic, (Optional)
Step 9
Reduce the heat to very low, cover with the lid slightly open and cook, stirring occasionally, 40to 50 minutes or until the beans are tender and the sauce thickens.
Step 10
Remove from the heat, and stir in the remaining olive oil, adjust the seasoning to taste with salt, transfer to a large bowl, and serve
Step 11
Serve it at room temperature as a side or even a light meal accompanied with Lebanese bread, Bell pepper (capsicum) and raw white onion.
