1 canunsalted corn
drained and rinsed
¾ cupcanned diced tomatoes
2 teaspoonsground cumin
salt
to taste
pepper
to taste
2sweet potatoes
guacamole
cilantro
salsa
Instructions
Step 1
Microwave the sweet potatoes and cut them in half. See page 238 in plant based on a budget cookbook
Step 2
In a large bowl, combine the beans corn tomatoes green onion cumin salt and pepper
Step 3
Placed the sweet potatoes on a plate. Using a spoon, mash the insides of the sweet potato while still leaving them inside their skins
Step 4
Top the sweet potatoes with the bean mixture
