Instructions
Step 1
Brown the ground beef and drain off any excess fat. Add taco seasoning as directed on pkt.
Step 2
Mix soup and salsa and set aside.
Step 3
Mix beef, beans, rice, corn and 1/2 the cheese.
Step 4
Evenly distribute the mixture between 10 to 12 flour tortillas, roll up tortillas.
Step 5
Place tortillas in 2 greased casserole dishes; seam side down. Pour salsa mix down middle of each pan.
Step 6
Bake uncovered at 350° for 20-25 minutes. Sprinkle with remaining cheese, then heat for an additional 5 minutes.
Step 7
If desired, cover and freeze (before cooking) the second pan for up to 2 months.
Step 8
Thaw frozen casserole in fridge overnight. Bake covered at 350° for 30 minutes. Uncover and bake an additional 5 to 10 minutes or untill heated through and cheese is melted.
