Instructions
Grill Method:
Step 1
Heat charcoal 30 minutes until ash covered or gas grill 10 minutes with the lid closed until approximately 375˚F to 400˚F. Clean and oil grate well.
Step 2
Place chicken on grill and sear for 4 to 6 minutes per side, or until nicely marked. Flip chicken, lower heat and continue to cook until chicken reaches an internal temperature of at least 165˚F (about 20 40 minutes, depending on size). Turn meat every 10 minutes during cooking time.
Step 3
While chicken cooks, place a small pan over medium-high heat. Add butter and sliced bell pepper and onion. Cook until veggies are nicely caramelized.
Step 4
To serve, allow chicken to rest before slicing thinly across the grain. Serve on tortillas with veggies and your favorite fajita condiments like salsa, sour cream or guacamole.
Grilled Fajita packets
Step 5
Create individual fajita packets with aluminum foil, fajitas, sliced onions, sliced bell peppers and tomatoes. Cook packet on grill until chicken is 165 degrees.
Stir Fry Method:
Step 6
Cut meat across the grain into ½ inch slices. Heat wok or large heavy skillet over High heat 3 minutes. Add 1 tablespoon oil to wok/skillet and tip pan to coat. 2. Cook 1 pound at a time to prevent crowding. Stir fry 7-8 minutes, stirring frequently, until no longer pink and until an internal temperature of 165*F is reached.
