Instructions
Step 1
Cook noodles according to packet instructions.
Step 2
Meanwhile, heat the tofu in a pan on medium-high heat for 5-8 minutes.
Step 3
Assemble the salad ingredients together including the mint and coriander and mix with the cooked noodles and tofu.
Step 4
To make the dressing, whisk together the lime juice, sesame oil and soy sauce.
Step 5
Divide into two portions and store in the fridge until ready to serve. To serve, pour the dressing over the salad and enjoy.
