Instructions

Step 1
Cook bacon until crispy and set aside.
Step 2
Wash and halve cucumbers. Cut off end stems and scoop out seeds with a small spoon and discard.
Step 3
Chop scallions and halve avocado and discard pit. Wash lettuce and set aside.
Step 4
Spread one half of the avocado onto each half of the cucumber. Sprinkle with salt and chopped scallions.
Step 5
Place two bacon slices atop each cucumber with avocado spread. Thinly slice chicken breasts and place one chicken breast onto each cucumber with avocado spread and bacon.
Step 6
Add lettuce atop the chicken.
Step 7
Place remaining cucumber halves on each sandwich.
