Instructions
Step 1
Heat the oil in a large pan. When the oil smoking hot lower the heat and add the spices.
Step 2
After a few seconds add the chopped onions and the minced garlic.
Step 3
Once the onion and garlic are golden brown (around a minute) add the chickpeas, coconut milk, and salt to taste.
Step 4
Cook for 5 minutes then add the washed spinach. Stir well and cover.
Step 5
Allow the spinach to wilt for a couple of minutes. Add a squirt of lemon juice.
Step 6
Best served with basmati rice and naan bread.
