Instructions

Step 1
1. Preheat oven to 325. Line baking sheet with parchment paper.
Step 2
In a large skillet combine oats and nuts, salt and cinnamon. Cook on medium-high, stirring often to toast - about 6 minutes.
Step 3
Mix apricots, honey, olive oil, and flaxseed in a microwave safe bowl. Microwave for 1 minute or until it is just bubbling. ALTERNATIVELY, combine the ingredients in a sauce pan and heat for about 3 minutes.
Step 4
4. Stir vanilla into honey mixture. Then pour it over the oat mixture in the skillet. Mix well.
Step 5
5.Spread granola out on sheet pan. Bake for 15 minutes until light brown. Let cool completely.
Step 6
6. Break granola into pieces and store in air tight container or fridge.
