Ingredients

3red potatoes
medium, or new, unpeeled, cooked and cubed

8stuffed green olives
chopped

rosemary
to taste

3 tablespoonsparsley
chopped

2cloves garlic
crushed

3canned anchovies
flat, mashed, optional but adds great flavor

1 tablespooncapers
chopped, optional but also improves flavor

3 tablespoonsolive oil

salt
to taste

pepper
to taste

Instructions
Step 1
In large bowl, place the potatoes, olives, rosemary, parsley, garlic, anchovies, capers and olive oil. Salt the Chicken inside and out with salt and pepper
Toss the ingredients in the bowl together gently, and use to stuff the chicken. Do not stuff too tightly.
Bake at 375 degrees for 70 to 80 minutes. Quarter and serve the bird with the dressing.
