Veggie and Bean Burritos with Cilantro-Lime Crema

Ingredients
4 servings
1 tablespoonolive oil
1onion
halved and thinly sliced
1bell pepper
any color, cut into strips
0.5jalapeño
seeded and minced, save the other half to serve on the side if you like it spicy
1 x 15 ouncecan black
drained and rinsed
2garlic cloves
minced
¾ teaspoonchili powder
¾ teaspoonground cumin
¾ teaspoonsalt
⅔ cupsour cream
⅓ cupfresh cilantro
chopped
2 tablespoonsfresh lime juice
6flour tortillas
8- or 10-inch
½ cupsMexican cheese
freshly shredded
Instructions
Step 1
To make the filling: In a large sauté pan, heat the olive oil over medium heat.
Step 2
Add the onion and cook, stirring occasionally, until the onion begins to soften and brown, 3 to 4 minutes.
Step 3
Throw in the bell pepper and jalapeño and sauté until the veggies can easily be pierced with a fork, 5 minutes or so.
Step 4
Add the beans, garlic, and seasonings and cook until the beans are heated through, another 1 or 2 minutes,
Step 5
Meanwhile, to make the cilantro-lime crema: In a small bowl, whisk together the sour cream, cilantro, and lime juice.
Step 6
To assemble the burritos: Lay out the tortillas on plates or foil.
Step 7
Evenly distribute the Monterey Jack and then the veggie filling in a strip down the middle.
Step 8
Fold up the burritos on the bottom and then the sides and roll them up.
Step 9
Serve warm with the crema as a dippings
