Instructions

Carne Asada

Step 1
Finely chop and dice all the marinade ingredients and mix the steaks in it and leave to sit for at least an hour. Ready for frying later

The Queso

Step 2
Dice and fry the onion in oil for 5 minutes on a medium heat to soften.
Step 3
Crush the garlic and fry for a further 2 minutes.
Step 4
Add the butter, flour, and paprika and fry for 1 minute before gradually adding the milk. Once this is fully incorporated, add the cheese and whisk to combine.
Step 5
Simmer to desired thickness or adjust with more milk if necessary. Adjust flavour with the vinegar, salt, and pepper to your liking.

The Guac

Step 6
Finely Dice all the ingredients and mix, adjusting the flavour with salt and lime juice to your liking

The Salsa

Step 7
Char all the veg on an open gas hob for 2 minutes to slightly blacken.
Step 8
Put all the ingredients except the coriander in a blender for 2 minutes then add the coriander for 1 minute.
Step 9
Check the flavour and adjust with salt, lemon juice, and hot sauce.

To Assemble

Heat your oven Chips

Fry your steaks

Assemble your burrito in the order you want. I think it’s best to leave some dryer /crunchier bits on top to stop the fillings leaking out
