Crispy Panko-Crusted Chicken Breast with Bacon Chive Cornbread & Maple Drizzle

Forget the backdoor, we’re bragging upfront here: Our bacon chive cornbread is phenomenal. It’s smoky, garlicky, and the perfect side to this herby, panko-crusted chicken breast. And if there’s any way to improve breaded chicken that reminds you of fried chicken tenders, it’s by complementing it with maple syrup. Just be sure to act like your 8-year-old nephew and pour the syrup over everything (and then some).

Instructions
Step 1
Place chicken in separate tray from cornbread mix.
Step 2
Measure 1/4 c water (1/2 c for two servings) for corn bread mix. With a fork, vigorously mix the chive, egg, and oil mix and water into cornbread mix until batter is smooth with no dry spots. Sprinkle the bacon bits on top.
Step 3
Spread mayo over chicken. Sprinkle seasoned panko over top.
Step 4
Cook. Plate. Pour maple syrup over everything.
