Vietnamese Savory Mini Pancakes
This recipe is similar to banh xeo, a Vietnamese crepe but are a mini version which I find easier to make. They are crispy and savory. The way you eat these are wrapped up in lettuce and fresh herbs and dipped in an umami spicy fish sauce. So delicious!

Step 1
Mix the banh khot/banh xeo mix according to package. Cut shrimp into small pieces and boil for 1-2 minutes (optional). In an Danish Ebelskiver Pan, add oil. Once oil is hot, ladle in about 2 tbsp of the banh khot mix and let it cook for about 30 seconds then add some shrimp on top. Cover with lid and cook for about 1 -2 minutes until the bottom is extra crispy and batter sets. Remove to cooling rack. Serve with fresh veggies and dip in Vietnamese fish sauce.
