Ingredients

⅓ cupfresh cilantro
chopped
⅔ cuplight sour cream
1 tablespoonchipotle chile canned in adobo sauce
minced
1 teaspoonground cumin
1 teaspoonchili powder
4 teaspoonsfresh lime juice
¼ teaspoonsalt
4 cupsromaine lettuces
shredded
2 cupsskinless boneless chicken breasts
chopped, roasted, about 2 breast
1 cupcherry tomatoes
halved
½ cupavocado
diced, peeled
⅓ cupred onion
thinly vertically sliced
1 x 15 ouncecan black beans
rinsed and drained
1 x 8.75 ouncecan no-salt-added whole-kernel corn
rinsed and drained
Instructions
Step 1
To prepare dressing, combine first 7 ingredients, stirring well.
Step 2
To prepare salad, combine lettuce and remaining ingredients in a large bowl.
Step 3
Drizzle dressing over salad; toss gently to coat.
Step 4
Serve immediately.
