Sometimes you don’t need to reinvent the wheel. Banana bread is one of those times. At their core, all banana bread recipes are the same so I’m sure someone has posted this one before, but oat flour is my new obsession and I definitely recommend trying it. Cost of non WIC items: $6.69

Step 1
Preheat oven to 350 and grease a loaf pan

Peel and mash 4 of the bananas (don’t mash the 5th banana!)

Mix all ingredients with the mashed bananas until fully combined. Pour into greased pan.
Step 4
Peel the final banana. Cut off 5 small pieces. Cut the rest of the banana in half lengthwise. Position the larger pieces just off the center on top of the batter. Use the smaller pieces to fill the space between.

Bake for 50-60 minutes. Test for doneness with a butter knife.
