Chorizo lasts for ages, which is why it's such a great storecupboard essential to have to hand for those days when you're unprepared. Here's an idea for how to use it in a hassle-free traybake.

Instructions

Step 1
Preheat your oven to 180°C/gas mark 4.
Step 2
Grab a roasting tin, throw in the sweet potato wedges, drizzle them with olive oil and add a pinch of salt and pepper. Roast for 15 minutes (20 minutes if using frozen) before adding the chorizo and red onions and roasting for a further 15 minutes. Finally, add the broccoli and cook for a final 15 minutes before serving.
