Chop chicken into small chunks, slice the onion thinly and place in a bowl. Pour over the juices of one large orange and add garlic and ginger. Then combine all the dry ingredients (excluding the sweetner) in a bowl and mix, then coat the chicken evenly with the dry mix and mix all together with chicken, onion, garlic and ginger. Spray a frying pan with olive oil frylight and fry off the chicken and onions to 60% cooked.
Boil the kettle and add 300ml water to the stock pot and add to the chicken. Simmer for 10 minutes to cook the chicken add sweetner and then reduce the sauce. If needed use cornflour slurry to thicken.
