1Can Red Enchilada Sauce
1 x 14 ouncefire-roasted diced tomatoes

1 ¾ cupsRotel
1clove garlic
minced
1 cupgreen spring onion
peeled and diced

6 ounceslow fat cheddar cheese
Instructions
Step 1
Add all ingredients in the slow cooker except cheese. Cook on low for 6-8 hours or high for 3-4 hours.
Step 2
Garnish with 1 ounce of cheese per serving.
