Pickling seasoning homemade

Dill: In place of the dill seeds, you can substitute 5 heads of fresh dill (the yellow flower portion) or 2 teaspoons dried dillweed for each jar (10 teaspoons total). Make your own pickling mix to use in pickling vegetables. This fragrant combination of dried herbs and spices adds wonderful flavor to any homemade pickle. You can make quick pickles using this recipe too. You can add your favorite spices to any basic brine, like this one. Some combos to try: Cumin seeds, coriander seeds, cinnamon stick; coriander seeds, ground ginger, black peppercorns; smoked paprika, cumin seeds, caraway seeds. A general rule of thumb for the dried-to-fresh herb ratio: Use one-third the amount of dried herb for the fresh herb called for in the recipe. For example, if you're converting fresh sage to dried sage in a recipe that calls for 1 Tbsp. of fresh sage, use 1 tsp. of dried sage instead.
