Instructions
Step 1
Place the onion in a large saucepan with the bay leaves and 150ml of the stock.
Step 2
Bring to the boil, cover and simmer for 5 minutes.
Step 3
Add the potatoes and leek to the pan.
Step 4
Pour in the remaining stock and season to taste.
Step 5
Bring to the boil, cover and simmer for 25 minutes until tender.
Step 6
Discard the bay leaves and transfer the mixture to a food processor or blender.
Step 7
Blend until smooth and return to the saucepan.
Step 8
Stir in the fromage frais and reheat the soup gently, without letting it boil.
Step 9
Season to taste and serve, garnished with shredded and cooked leek, if using.
