Creamy Carrot Pasta

250gpasta

2 Tbspolive oil

2shallots

3carrots
medium

3garlic cloves

½ tspchili flakes
optional

1 Tbspwhite miso

0.5lemon juiced

½ cupcashews

⅔ cupwater
or more

salt

pepper
Carrot top gremolata
Breadcrumbs
Instructions
Step 1
Sauté carrots and shallot on high heat until slightly charred, add the parsley stems, then reduce the heat and add the garlic.
Step 2
Blend all ingredients for the sauce.
Step 3
Optionally prepare the gremolata and breadcrumbs.
Step 4
Cook pasta 1 minute less than packaging instructions.
Step 5
Combine sauce and pasta in a pan, add pasta water as needed to loosen the sauce.
Step 6
Serve with breadcrumbs and gremolata and enjoy!
