Step 1
Cook the pasta in salted boiling water until al dente. Drain and set aside.
Step 2
Chop the garlic and chili pepper and cook in a drizzle of olive oil until fragrant. Then add a ladle of water and cook for 1 more min.
Step 3
Add the cooked pasta and the pasta water (using pasta water helps to create a silky, cohesive sauce that clings to the pasta better and adds an extra layer of flavor). Start with 1/2 cup (100ml) of pasta water and adjust as needed to achieve the desired consistency and flavor.
Step 4
finely chop the parsley and add it to the preparation. Cook and stir until desired consistency is reached. You can add olive oil to taste to obtain a more unctuous texture.
