Ingredients
4 servings
2 x 15 ozcans of black beans
rinched anddrain, or 1 and 1/2 cup of fresh cooked black beans
2 cupscorn
I used fresh corn
½ cupgreen onion
dice
0.5fresh jalapeno pepper
seeded and minced
1red bell pepper
diced
½ cuppurple onion
dice
2fresh plum tomatoes
seated and chopped
½ teaspooncumin
or more, adjust to taste
1 tspminced garlic
1 tablespoonhoney
1 tablespoonsolive oil
¼ cupfresh cilantro
chop
salt
to taste
pepper
to taste
1avocado
peeled seated and cut into chunks
Instructions
Step 1
Bring a small pot of water to boil then add corn kernels cook for about a minute or 2
Step 2
Immediately drain water and rinse in cold water set aside
Step 3
In large bowl combine the black beans corn green onion jalapeno bell pepper purple onions and tomato
Step 4
Add cumin mince garlic cunny Olive oil cilantro elantro salt and pepper to taste
Step 5
Toss add avocados and chill until serving
