Step 1
Preheat the oven to 350º
Step 2
Heat a small cast iron with 1 tsp olive oil over medium-high heat. Add red pepper flakes, onion, and garlic, stirring often for 30 seconds, until fragrant.

Add broccoli and zucchini to the pan and season with salt and pepper. Add water and immediately cover and let it cook for 2 minutes.

Once cooked, remove from heat.

In a separate bowl, whisk the eggs. Stir in the veggies from the pan and mix together.

Place the skillet over low heat with 1 tsp olive oil. Once reheated, add the egg mixture and cook on low for 3 minutes, until the edges begin to crisp. Add your feta, then move to the oven and bake for 9-11 minutes.
Step 7
Serve with parsley sprinkled on top.
