Instructions
Step 1
Preheat oven to 180C or 350F.
Step 2
Brush a nonstick muffin pan with olive oil or non stick cooking spray
Step 3
In a bowl, whisk up the eggs, milk, salt & pepper and herbs.
Step 4
Pour a small amount of the egg mixture into the bottom of a muffin tray.
Step 5
Add the kale, tomatoes, pumpkin seeds
Step 6
Pour remaining egg mixture on top
Step 7
Bake for 20-22 minutes or until the eggs are set.
