Instructions

Step 1
Line a 20 cm quiche dish with pastry and leave in the fridge to cool.
Step 2
Cut the butternut into small cubes and together with olive oil, salt and pepper. Roast until soft and golden
Step 3
In the meantime, grate the blue cheese, cheddar and mozzarella , whisk the eggs with the cream, salt and pepper.
Step 4
Once the butternut had cooled down slightly, place evenly over the pastry. Add the grated cheeses and then pour in the filling.
Step 5
Sprinkle with pumpkin seeds and bake the quiche for 30- 40 minutes until brown and pastry cooked through.
