Instructions

Step 1
Season chicken lightly with salt and let sit 30 mins
Step 2
Whisk together the soy sauce, brown sugar, mirin, sesame seed oil, ginger, five spice, and cayenne
Step 3
Place chicken in resealable plastic bag and pour. In marinade. Squish the marinade around so all the chicken is evenly coated. Refrigerate overnight.
Step 4
Preheat oven to 400 degrees.
Step 5
Place chicken skin up in shallow 8x13 inch roasting dish, then pour marinade over the meat. The marinade should generously cover the bottom of the pan and if it doesn't add 2 tbsp water.
Step 6
Cook for 45mins
Step 7
Crank oven to 450 to reduce the sauce - about 12 mins. Brush the chicken with marinade from the pan every 3-4 minutes to glaze them.
Step 8
Serve warm, over rice mixed with cilantro and scallions.
