Instructions

Step 1
Preheat oven to 425 degrees F.
Step 2
Wash and cut potatoes into 1" to 1 1/2" pieces and add to boiling water. Cook for 9 minutes.

Drain immediately and put in a large bowl. Add olive oil, thyme, basil, garlic and salt and gently toss to coat evenly.
Step 4
Transfer potatoes to a large baking sheet lined with foil, arrange them into one layer.
Step 5
Bake for 20-30 minutes or until the bottom side is golden.
Step 6
Serve with chopped cilantro and drizzle with fresh squeezed lemon juice.
